THE PUMPKIN ROLL
A fall classic worth bringing back every year.

CAKE INGREDIENTS
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup pumpkin purée
- 1 teaspoon lemon juice
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
FILLING INGREDIENTS
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 6 tablespoons butter, softened
- 1 teaspoon vanilla extract
DIRECTIONS
- 1. Preheat oven to 375°F.
- 2. Line a jelly-roll pan with parchment paper.
- 3. Beat eggs and sugar until light and fluffy.
- 4. Add pumpkin and lemon juice.
- 5. Combine dry ingredients separately and gently mix into the pumpkin mixture.
- 6. Spread batter evenly in the prepared pan.
- 7. Bake until the cake springs back when lightly touched (about 13-15 min).
- 8. Immediately turn the warm cake onto a powdered-sugar-dusted towel.
- 9. Roll the cake carefully in the towel and allow it to cool.
- 10. Prepare the cream cheese filling.
- 11. Carefully unroll the cake.
- 12. Spread the filling evenly.
- 13. Roll the cake again.
- 14. Refrigerate before slicing.
- 15. Dust with powdered sugar before serving.

Ingredients
- 4 cups sliced apples (Honeycrisp)
- 1 tsp ground cinnamon
- 1/2 cup brown sugar
- 3/4 cup rolled oats
- 6 tbsp cold cubed butter
Instructions
Toss sliced apples with cinnamon and 2 tbsp sugar in a baking dish. Mix oats, remaining brown sugar, and butter until crumbly. Top apples and bake at 350°F for 35 min until golden brown and bubbly.
